Meat Probe Reads Wrong or Not at All
Meat probe reading wrong, or blank: start with the probe, its cable and the outlet in the oven wall before suspecting the control. Viking Repair Redmond, (425) 585-2373.

Check, in this order

Find the probe outlet; on Viking VDOE and RVDOE double ovens it is in the upper oven only.
pass outlet found: go on to step 2 fail no outlet: this oven has no probe feature

Oven cool: holding the plug, not the cable, push it fully into the outlet.
pass seats firmly: go on to step 3 fail loose or will not seat: stop here

Run the cable through your fingers for kinks, crushing, melted spots or a bent tip.
pass cable and tip sound: go on to step 4 fail damage found: the probe needs a Viking replacement

Put an instant-read thermometer beside the probe tip in the thickest part of the meat.

Probe, outlet, then control
On the Viking wall ovens that have one, the probe plugs into an outlet on the cavity wall: the left wall on VSOE and VDOE Premiere and French-door models, the right wall on the RVSOE330 and RVDOE330.
Most bad readings start at the probe itself: Viking’s guides rule out pulling the cable with tongs or leaving the probe inside during a self-clean, both easy ways to damage it.
On DSOE and DDOE ovens with the EOC4 control, a shorted probe input logs F04. The service manual treats it as non-critical, so baking carries on without the probe feature.
Stop and call if
- The display flashes NO PROBE with the plug pushed fully home.
- F04 shows on a DSOE or DDOE electric wall oven.
- The outlet in the oven wall looks scorched, cracked or loose.

Can I use any meat probe in a Viking oven?
Viking's use-and-care guides warn that probes other than the one supplied with the oven may be damaged in use. Order the replacement against your model number, and handle it by the plug and the handles rather than the cable whenever you insert or remove it.
Why does the probe disagree with my hand thermometer?
Placement, more often than not. Viking's guides want the probe tip in the middle of the thickest meat, clear of bone, fat and gristle; a tip anywhere else reads a different part of the roast. Move it and compare again. Still far apart? Call Viking Repair Redmond on (425) 585-2373.
